Hi again its chefshorne with another easy recipe to try out.
Pan seared lamb chop with Israeli couscous and Spinach puree. very delicious
Ingredients
For the Lamb
6 TO 8 pound rack of lamb chop
1 teaspoon of salt
1 teaspoon of sugar
1 teaspoon of paprika
1 teaspoon of black pepper
1 teaspoon of olive oil
For the couscous
I pound box of Israeli couscous
2 cups of chicken stock
salt and pepper to your taste
I tablespoon of lemon juice
I onion dice
a spring of thyme and rosemary
For the spinach puree
I bag of fresh or frozen spinach
Half cup frozen sweet peas
2 cups of water
1 teaspoon of lemon juice
Method
For the lamb rack
1 mix all dry ingredients in a bowl, with this you creating a rub for the lamb
2 coat the lamb with the rub and also the olive oil.
3 allow the lamb to rest in the room temperature for 15 min
4 turn oven on to temperature of 400 degrees
5 place a pan down on the stove top to get hot.
6 when hot sear the lamb in pan to gain color and finish cook in oven to your desire temperature
For the couscous
1 bring chicken stock to a boil.
2 heat a pan and add the olive oil saute couscous with the dice onion and spring of thyme and rosemary.allow the couscous to gain color
3 Pour the boiling stock into pan with the couscous.
4 Allow the mix to simmer. the couscous will absorb the stock. If the mix is getting too dry add water or more stock
5 Add lemon juice to mix to give some acidic .
6 finish with salt and pepper to your taste
Method
For the spinach puree
1 Bring water to boil
2 blanch peas and spinach the water.
Blanching is boiling water, putting food in for quick heating, then removing and placing in cold/ice water to quickly chill.
3 Place spinach, peas, lemon juice and some of the boil water in blender and puree to smooth consistence. the lemon juice well allow the spinach to stay bright green. season the puree with salt and pepper to your taste.
